Badhakopi (Cabbage Curry) by my friend Sanjay
1 cabbage,
1 onion,
1 diced tomato,
1 TBSP coriander seed,
1 TBSP cumin seed,
1 tsp turmeric,
1 tsp ground cumin seed,
½ tsp garam masala spices,
2 TBSP salt,
oil (olive is good),
fresh ginger or garlic (finely chopped or paste form),
and green chilis to desired hotness level (we had nine).
Chop cabbage, onion, green chilis, and ginger to medium fine and keep separate.
Thickly coat pan with (olive) oil, heat pan to medium or medium-low.
Stir in coriander seed and cumin seed, cook for one minute.
Stir in ginger or garlic paste, cook for one minute.
Stir in green chilis, cook for one minute.
Stir in onion, cook for one minute.
Stir in two tsp sugar, cook for five minutes.
Once it starts to brown, stir in two TBSP salt.
Stir in one tsp turmeric, one tsp ground cumin, half tsp garam masala spice
Stir in one diced tomato, fry for five minutes.
Stir in cabbage, evenly distribute all the ingredients.
Cover and cook for 5 minutes.
Stir again - don't let stick or burn. Re-cover.
Let cabbage boil down. Once the moisture has boiled off, take off the cover and continue frying and stirring until cabbage browns and there is no moisture left. It will start to get sticky and then you will know it is done!
